Minestrone

This post is simply just a copy of last nights dinner, for future reference, since it turned out pretty tasty:

Wheat rotini pasta
1 can Kidney beans
2 cans chopped tomatoes
1/2 onion, chopped
3 cloves garlic
3 stalks celery (small ones)
1/2 bell pepper
1 cup (ish) frozen peas
1 small head broccoli
Lots o' kale, chopped, added at the end

For extra liquid, don't drain the tomatoes, and use the water used to rinse beans. This was not made to be soupy but could be with the addition of veg stock.
